Get supported x402 payment kinds

Returns the payment kinds supported by Circle Gateway for x402 batching.

Each kind includes the GatewayWallet contract address in extra.verifyingContract which clients use for EIP-712 signing, and an extra.assets array containing the supported tokens with their addresses, symbols, and decimals.
